Traditional Russian apple pie (Tatiana’s pie).
The traditional Russian apple pie exists in almost any Russian family. I think there are many variations of the same dish. This is a recipe of my aunt, Tatiana. She used to cook it for us every time when my family were coming to her house. For me the aroma of this pie has a strong association with my aunt’s old home and brings so much happy childhood memories.
Russian apple pie recipe
1,5 cup lukewarm water
2 table spoon olive or sunflower oil
1 tea spoon salt
1 tea spoon sugar
7 g (1 pack) of baker’s yeast
4 cups flour
Vanila and sugar for apples (optional)
In a big bowl mix egg with water, then add oil, salt, sugar and dissolve the yeast. Gradually add the flour. Knead for several minutes, until the dough is soft. Shape into a ball and place in the bowl. Cover with a clean kitchen cloth and place in a warm environment to rise.
Prepare apples. Core and cut them into wedges. Add vanilla and sugar if you like. When the dough rises first time, push it down. When it rises again, divide the ball into two. Leave a small ball of dough for sealing the cake later. Roll the bigger part of the dough with a rolling-pin. Line the baking tray generously with oil and place the dough inside. Carefully arrange the apples in the tray. Seal the pie with stripes of dough as shown on photo. Bake at 180 C until well risen and golden. Let it rest and cool. My aunt believes that this traditional apply pie should be enjoed with a cup of strong black tea.
