Retiro is beautiful all year around but spring is one of my favorite seasons. Especially when the park is in bloom. All shades of white and pink with spring green create a spectacular feast for the eyes. Lawns and paths are covered with petals of blossoming trees. Cherries, almonds, and apples…

The park looks like a big cake dusted with icing sugar.

As a result it makes me think about cake. This recipe is a simple one. Therefore, more time can be spent in the park and not in the kitchen.

Almond cake

Ingredients

200g yogurt

2 eggs

50g melted butter

200g white flour or mix of white and whole grain

50g almond flour

½ tea spoon of baking soda

100g sugar

100 fruits (apples, pears, strawberries, etc.) optional. I did not put any in the cake on the picture above.

Preheat the oven to 180 C. Almond flour can be replaced with ground almond which you can made in any food processor at home. Mix flour of your choice with almond flour, salt, and soda. Melt butter on a low heat. Mix eggs and yogurt and then add melted butter. After that, mix well and add it to the mixture of dried ingredients. Slightly stir it. Spoon it to the baking tray and bake for 20-30 minutes. After 15 minutes check the cake with a toothpick. It may need less time depending on the size of your cake tray and the oven. When the toothpick comes out clean, take the cake out and let it cool before cutting.
